Introduction and who should attend
This course provides participants with a strong and practical understanding of the management systems necessary to produce food in compliance with HACCP Codex Alimentarius and Food Standard ISO 22000:2005. The intensive five day program is based on the guidelines of ISO 19011:2002 and is designed for:
- auditors and lead auditors who are required to conduct assessments and audits of food safety management systems based on International Food Safety Standards;
- people responsible for developing and implementing food safety management systems;
- organisations with existing food safety programs that are looking to improve and add value to their system.
Course outline
The Food Safety Management Systems Auditor / Lead Auditor course covers:
- the requirements of Codex Alimentarius and ISO 22000:2005;
- the requirements of ISO 19011:2002;
- general principals of food hygiene and HACCP;
- identification and risk assessment of food safety hazards;
- documentation and record keeping requirements;
- management responsibility, authority and communication;
- resource management;
- planning and production of safe products;
- validation, verification and improvement of the food safety management system;
- planning, organising and conducting assessments and audits, including preparation of checklists,
- designing audit programs and writing effective audit reports;
- human aspects of assessments and audits including effective information gathering techniques;
- qualifications and characteristics of effective auditors.
Course objectives
On completion of the course participants will have an understanding of and be able to:
- explain the fundamental requirements of ISO 22000:2005;
- undertake performance improvement of the food safety system;
- identify those processes within their own or another organisation that must be effectively controlled;
- develop or build on an existing food safety management system;
- conduct effective audits of management systems to evaluate compliance and add value.
Course outcomes
The course includes a number of activities that are used to assess the competence of participants against the RABQSA International TPECS requirements. On successful completion, participants will be issued with a Certificate of Attainment in:
RABQSA – FS Food Safety Management Systems RABQSA – AU Management Systems Auditing RABQSA – TL Leading Management Systems Audit Teams
This certificate enables successful candidates to apply to RABQSA International for certification as a provisional auditor.
Fees: $2100 (GST exempt). Includes comprehensive course notes, lunch & refreshments and issue of certificates.
